We don’t have a specific policy, but any interest in a cooking event taking place in a non-kitchen space goes through some additional review, including our colleagues in risk management and the fire marshal.
We had a request earlier this year from a client who wanted to use 40 separate burners for an omelet station event. Due to the amount of activity and the concern that the HVAC would not be able to move the air sufficiently, we had to redirect that one.
Clients tend to not think about the additional need for airflow, fire extinguishers, etc. that most meeting and event spaces are not built to accommodate.
We have an instructional kitchen that we can use for cooking demos, and are hoping to update the technology in that space such that the demonstration could be streamed to another event/meeting space, or even online, depending on the size of the audience.
