Cory, we are in the process right now of building a new pub at Norris University Center. This will bring back alcohol service (beer and wine only) for the first time in nearly 40 years. The design is complete and we begin construction this summer, and will open the pub in August 2025. Our vendor, Chartwells, will manage the food service and hold the alcohol license. Our existing commission agreement will be extended to the pub, and so Norris will receive commissions from sales as we do in other retail venues. The retail alcohol commission is one we need to work on, because our current agreement only indicates a commission for catered events. Now that we are construction ready, we will be working on the program/operation plan in the very near future – so I don’t have a lot to tell you today. But please keep me as a contact, I would appreciate sharing notes with you as we move forward with how this pub will operate.

I am looking for folks that have a pub/venue in their union that serves alcohol and also has a third party food service contract ie. Sodexo, Chartwells, etc. What does the operation look like? How is it addressed in your food service contract? Do you receive a portion of the revenue?
